APPLICATION FOR REGISTRATION OF GACKO CLOTTED CREAM MATURED IN SHEEPSKIN AT EU LEVEL SUBMITTED

SARAJEVO, SEPTEMBER 15 /SRNA/ – The Food Safety Agency of BiH has submitted a request to the competent service of the European Commission for the registration of Gacko clotted cream matured in sheepskin with a designation of origin, which has been accepted and published in the EU Geographical Indications Register.

Gacko clotted cream matured in sheepskin was previously registered within BiH, in accordance with the Rulebook on Quality Systems for Food Products, which was a prerequisite for submitting the registration request at the EU level, the Agency stated.

This type of cream is obtained by aging thermally processed cow's milk from the indigenous Gacko cattle breed in a sheepskin.

It is produced from full-fat cow's milk without the addition of thickeners, flavorings, or starter cultures, with table salt as the only permitted additive.

It is characterized by a high dry matter content of over 70%, and the milk fat content in the dry matter must not be less than 85%, giving the product a consistent, spreadable texture.

The production of Gacko clotted cream matured in sheepskin is deeply rooted in the culture and tradition of the Gacko municipality, as evidenced by oral traditions, museum specimens of tools used in its production, epic songs with traditional musical instrument called gusle, and storytelling.

The first written records of traditional dairy products from the Balkans date back to the late 19th century, and records of Gacko clotted cream production specifically appear in the early 20th century.

After the request is accepted and published, the European Commission evaluates the application to verify whether it contains all necessary information.

During this review process, the Commission may request additional information or modifications from the applicant, which can affect the duration of the procedure.
